Ingredients
- 8 chicken drumsticks with skin
- 12 chicken wings with skin
- 60 ml (4 tbsp) honey
- 6 cm (2.5 in) fresh ginger, shredded
- 2 garlic gloves, degermed and crushed
- 5 ml (1 tsp) five-spices
- 60 ml (1/4 cup) soya sauce
- 90 ml (6 tbsp) orange marmelade
- 5 ml (1 tsp) shredded orange zest
- 30 ml (2 c. tbsp) sesame oil
- Sesame seeds, for sprinkling (optional)
Preparation
- Using a knife, make 3 or 4 incisions on each drumstick and place in a nonmetallic bowl with chicken wings. Combine marinade ingredients and pour over chicken. Marinate for at least 2 hours or overnight, if possible, turning occasionally.
- Place chicken on a baking sheet and drizzle with marinade. Bake in a preheated oven at 190 °C (375 °F) for about 50 minutes, turning occasionally and brushing with marinade on a regular basis. Sprinkle with sesame seeds and serve immediately.
- ON THE BBQ: Preheat barbecue to medium heat. Drain chicken pieces and grill for 20 minutes basting with marinade. If chicken has a tendency to burn, shut down the burner and finish cooking with burner off. Check if properly cooked by pricking the pieces of chicken to make sure that cooking juices have lost their pinkish color or until internal cooking temperature reaches 77 °C (177 °F). Sprinkle with sesame seeds and serve immediately.
Notes and tips
Macerate this tasty chicken overnight so that it is ready to bake or grill on the barbecue the next day.
